Inspired by James Spenser, I made a small batch beer with the intentions of using blackberries for souring.
I won't get specific on the recipe as it needs a lot of reworking but just thought I would plant a seed for someone looking to try something different. Basically, I used some mosaic hops in a malty beer to create a calculated IBU of about 5. The OG was about 1060. I prefer lower OG but wanted a bit of alc to inhibit infection. I added more mosaic at 2 minutes. I fermented about a week then added blackberries. I used frozen ones that I gently cooked for 5 minutes, again for infection. The result is quite tasty.

I used to make Blackberry wine a few years ago that was delicious.
