The seeds contain all the oils, which is where the heat comes from. They might also kill the head on the beer, depending on how much oil there is.

I'm not sure which one himzo was talking about
 
quick guess without knowing, the seeds usually have about 10x the heat of the chilli
 
If it's for the oils, I can understand - that makes perfect sense.

However, reducing the heat seems to be counterproductive imho... after all, it's about the heat. Less heat? Less chilli. More heat? More chilli or different species.

Damn. I hate it when you put a brew together, then read a thread like this one a few days later that tells you you've done something wrong.
I just put a ginger beer on to brew and the recipe said 10 or so chillis. I only put 6 in, but left the seeds....
