    Melbourne Brewers Monster Brew Day

One change that i can comment on is that we have planned to have more meetings outside of Ferntree Gully to cater more for the inner eastern members. The June meeting and AGM is planned to occur at Amber Craft beer to keep some consistency from the previous meeting location. visit...

    Water Filtration Done Cheap

i use one of these bad boys. does the job, just keep the slow flow rates as advised. you can taste the difference immediately after filtration so its a good start to removing chlorine and whatever else with activated carbon.

    Unintentional sour - what happened?!

i saw you added grain to the partial. im assuming you steeped and boiled the extraction? if not, thats a pretty likely source of lacto and other souring bugs.

True Weizen vs Belgian yeasts for German phenolics

Throwing a spanner in the works... Not that i was present at ANHC but while these Belgian yeasts may be producing the primary pehnols and esters that are appreciable in Weizens, what about all of the minor compounds that are being produced by the Belgian vs Weizen yeasts? Surely this is enough...

    Gypsum addition

The water from YVW is as soft as it comes. short of the mild amount of carbonates, its almost as soft as Pilsen. Without going to heavily into the hows, whys and whats, the two major salts you will ever need (95% of cases) is Calcium Chloride and/or Gypsum. Reserve carbonates (bicarb of soda...

Has anyone tried to make Sweet Potato Beer/Wine?

See an example Sweet Potato Porter i made a few months back. The beer turned out great but lacked any noticeable sweet potato character when finished. I'd def try it in a lighter beer like an ESB or even a saison as i had originally stumbled upon. it didn't gum up the mash like pumpkin does...

    White pepper in Wit

I resonate Manticle's thoughts. if you're using spices of any kind, use whole, freshly cracked under a heavy pot/frypan (no need to grind to a powder) or microplaned for large whole spices which are dominant e.g. nutmeg. don't waste your time with pre ground stuff unless you can be sure it...

    What are you Brewing 2016?

just thrown the WLP007 on it now. Out of the chiller the wort didn't taste much (if any) different to a standard porter. i ended up with an OG of 1.058 so my extract assumptions wasn't too far off. im really interested to get my hands on a bottle of this, the bruery make some delicious...

    What are you Brewing 2016?

Was reading about some funky Saisons and stumbled upon one using sweet potato as adjunct. I decided the caramel/toffee flavours of heavily roasted sweet potato would go well in a porter so i couldn't help myself! i roasted 1kg of sweet potato whole for close to 2 hours at 180deg. They ended...

    What are you brewing 2015?

Got this bad boy lined up for the weekend. I just received shipment of 3.5kg of the latest US 2015 season hops. :beerbang: going to have a play with Azacca, Equinox and Sterling in a Belgo IPA. Used Equinox last year and while i didnt enjoy it that much in an IPA, i can see it lending...

    Help with brewing bigger beers?

i found this very useful when i was batch sparging. http://braukaiser.com/wiki/index.php?title=Batch_Sparging_Analysis Now i pseudo fly-sparge by lading water via a 2L saucepan over the mash keeping the tun constantly full double batch brewing in a 50l vessel. I find the result much more...

    VICBREW 2015

Looking at the detail of scoring on the first scoresheet, i'd say this is the standard that needs to be set across the entire flight. This comes from experience AND willingness to evaluate correctly and populate the scoresheet well. This is the level of detail i like to provide as a minimum...

    VICBREW 2015

To speak frankly, as someone who judges regularly i often forget to fill this out but I deliberately don't omit it. Why? Probably due to the amount of detail i put into my notes and likely because its pushed off to the side of the scoresheet. You're too focused on evaluating and writing more...

    VICBREW 2015

Paul, Bring both along to the meeting tonight (if you have enough) and i will volunteer myself as someone who judges how i think they will fall in the Nats. In short, just because it gets 120 in specialty as a red IPA doesn't mean it stylistically fits an APA. IPA to APA translates well (and...
