    Dried Or Liquid

Personally I have found very little difference between the dried an liquid coopers malt extracts and more often than not I use the tubs from my lhbs and he assures me that his turnover is very high. I recently got my hands on some breisse malt extract and all that I have read suggests that they...

    Pot Choice

Dont forget about the Big W units $20 for 19L SS stock Pot, I would go bigger rather than smaller as you will more space to avoid a boil over (and this will give you more flexiblity in the future my 2c) other than that go the 15L one thing i have found a larger volume will be slower to loss heat...

    Liquid Vs Dry Malt Extract

I always found liquid malts to be more cost effective so i normally just use pale liquid as a base, it depends i gues on the turnover of the HB supplier your using. If in doubt go the tinned cans or the dried malts.

    Yeast Advice

The last time i did this it was greyish and smelt fine, could it be murky due to being roused??? If you are worried about it i would not use it and start another culture, i found it easier to do it with several bottle dregs, like 2 -3 tallies, more cells to start off with i guess.

    Dundee India Pale Ale

Off topic, Ive noticed a lot of issues with Dans and the quality of imported beers, I will admit ive never had any issues, has any one had success in returning the fualty good to them, letting them know it has been miss treated, i know that wine will be exchanged if it has corkage, why should...

    Coopers Dark Ale

A smokey flavour would add a interesting aspect to this kit, peatted malt can be found at craft brewer, http://www.craftbrewer.com.au/shop/details.asp?PID=811, alternatively you could age a portion of the beer on charred barrell chips.

    Extract Ipa Recipe Critique

Have you thought about doning a 10-12L boil (as you are using mostly extract) with a gravity of 1.040 and using the cold water to bring the temp down as oppossed to no chilling? I thought this would stop you having an overly bitter beer at the end.

    Toucan Coopers Stout/dark Ale

I dont think the IBU will be 2 harsh as there is a lot of malt sweetness to balance it out in the kit, i am a big 2 can fan, i would reconmend just the 2 cans. Just remember as you have already talked about it might need some age on its side to get to its full potential.

    Coopers Toucan Stout Twist

My understanding of lactose is that it is non fermentable and given this i would taste after fermentation is complete and add it then to get the desired sweetness, proberbly start at about 200g. Personally i would use a crystal malt to add some sweetness in the background and a little more body...

    Points (abv)

a very valid point as you will be dealing with higher OG and potential increase in abv, it would become more important to pitch the correct amount of healthy yeast in a starter.

    Coopers Toucan Stout Twist

Adding the dexrose will increase your alcohol %, personally i would bump up the brown sugar to 500g, or use some treacle or golden syryp to enhance the caramel flavours, good quality coco for chocolatte twist, or even some fresh coffee steeped. As for the coconut I would toast it just prior to...

    Points (abv)

Yes, and also you will have a higher IBU and ABV%, to give and accurate figure will hard and each recipe will vary slightly, download the kit and extract spreadsheet (link- http://www.aussiehomebrewer.com/forum/inde...showtopic=29655) and it will give you fairly acurate account of what to expect.

    Esb 3kg Czech Pilsner

Done a few of these, most recently the bavarian lager and the bock and both turned out great. have done the czech pils and liked it will need to watch the temps though (as already mentioned). The only issue i had with these kits was with the belgium golden ale and the american pale ale, both...
