    Gents, I am making Canadian blonde and wondering what yeast will improve it or just stick to the supplied kit yeast.

    It is an estery taste and I ferment all my brews at around 25 - 27 as i am in Central Qld but I expect a bit of a shit taste early in the conditioning and it usually fades away but this one is taking its time.

    Is it possible to ferment in the fridge? as the heat in Mackay is a pain in the arse to brew with, I use ice blocks in the laundry tub but there must be an easier way.

    G'day all, I am about to brew a kit of coopers aussie pale ale, do I just sprinkle the kit yeast on top or do I hydrate it with boiled water??

    Yep, I used a can of Coopers Canadian Blonde, kit yeast and 1kg of dextrose, I have used the same kit a few times and it is usually bubbling nicely the next day and for up to 4-6 days, then I rack it for a week and bottle.
