CO2 scrubs aroma, so adding some unfermented wort seems to add a little fresh hop aroma IMO. I just freeze some wort and add to kegs when kegging. No worries with them because of the release valve. Then add more, it's beer!

It could be a lack of magnesium sulphate. Tomatoes tend to lack that so the leaves go yellow and look like they're dying. Try some epsom salts (not in your beer though, it's a laxative)

I just did a cheery ale with 4.2kgs of sour cherries co-fermented. Tasty. Add some crystal because the cherries dry out, and as Darren pointed out, low hops.
