    Pressing australian apples for cider-what is a good mix?

    I made the mistake of using wine yeast on 2 of my batches.. they are both down to 0.995 and very dry 2 of the others are on english yeast and are sitting abotu 1.001 and still have some sweetness left in them. I really have to leave myself a reminder to stay away from wine yeasts!

    Hmm wow the cold and flu tablets have kicked in.. Not Wolfy's Galaxy its G&G flowers from 2011 Had to go to a 90 min mash as all the mill stuffed up half way through the crush and it hadn't converted all the sugars. As it stands Im down 5 points on gravity i can live with that in this style.

    Heh i just tried this the other day with a keg of Wit bier Short answer... No not really Yes it got carbonation but diminished as soon as the keg got cold although it has almost got back up to the correct level after a few days.

    Buy 6 months worth of grain and and brew it in one hit.. No more grain just beer, no problems! :D Mark (MHB) used to dose his stock with tablets i believe. Was it Sulphur? (sorry Mark if im wrong) Im sure some of the larger HBS have similar issues and may have some pointers as well.
