    Prior to pitching you WANT to oxidize (well, aerate) your beer. It's essential for yeast reproduction. It's the finished beer you don't want to oxidize.

    Don't use them for bittering unless you know the AA%. Summer are great but a fairly understated hop, so best suited to pale beers with minimal competition (lager, faux lager, kölsch, saison, golden ale).
