    Have popped a request on the bulk buy thread so fingers crossed! Appreciate all the tips, thanks esp to those running the same set up as I'm considering - glad to know it's meeting expectations. Now, can I leave that ESB on the yeast cake a few more weeks to avoid having to bottle.... (rhetorical)

I know, get a bigger fridge, and eventually I will - at which time no doubt I'll also have some larger kegs to go with it. at this time however, I'm going the smaller ones.     depends on your OG - anything over 1.060 i'd chuck it all in, lower, well half has worked for me many times.

    maybe build a stand to mount a 25litre cube with a corner at the bottom, add tap in new location, ghetto conical kinda sorta. at least itwould help tap off the yeast even if it doesn't correctly set in motion the convection currents. but I suppose it might. Stuff it,i might try that.

    I've used T58 numerous times and I think I am finally cured of it. The only decent dry Belgian yeast I've used was the kit yeast from a brewferm tin. That was good stuff! T58 throws loads of banana and clove and pepper when fermented too warm so keeping it lower temp 17℃ or so has worked better...

    Yes I was wondering about this too - will have to do some reading to find the limits I guess. If utilization is unknown due to liquid volume it would be too much like working in the dark in term of calculating final IBUs I guess.
