    2nd brew just some questions

AS others have said, 3-5 days for a healthy system to ferment out. You've just make your first improvements towards better beer! soon it will be temp control, hops, specialty grains, all extract, maybe even all grain! Good luck with your second brew!

    Back into brewing!

No. A fresh wort kit is an all grain wort in a large container(20L), ready for you to just add yeast(and sometimes a little extra water) 'Kit and Kilo' refers to a Branded kit ( ie coopers lager kit) which comes with the yeast in the lid, and a kilo of dextrose or dried/liquid malt extract...

    Coopers Mexican Cerveza

It should be ok (not ideal but ok) As Yum mentions, who know how long it was on the shelf before you got it. I'd re hydrate the yeast to give it the best chance of doing it's job.

    Coopers Mexican Cerveza

I'll back you Bribie. The Kit yeast works quite well in the cerveza kit, and using 2 is the solution to gettting the best out of the kit yeast. If not Try Notto for it's high flocculation, but it will drag some of the hops flavout with it.

    ESB Extra Special Stout

An overnight cold steep might give you less perceived bitterness, but steeping your grains at 70 degrees instead of in just boiled water(ie closer to 100) will help this too. I don't know anything about the ESB 3K stout kit but finding a base stout kit with lower bitterness would be a sure...

    I need a recipe!

So you've tried this? seems reasonable. Saaz might be a good partner in crime for hallertau(although I've not used it yet) I've also got my eye on Neil's Hallertau bomb. like I said I'm looking for peoples favourite, ie personal experience with hallertau.

    Bulk Priming - overprime

All if the above info is good and true. Just one more thing to consider how many bottles have you opened? It may just be ONE or TWO bottles slightly over carbed if you didn't stir the wort half way through bottling( the last bottles) and might have slightly more trub too ( creating more...

    I need a recipe!

HI Guys I've Had Some Hallertau Mittelfruh in my hops fridge for a while now and haven't been motivated to use it. So quite simply what I am asking is to suggest your favourite recipe using this hop so I can be motivated to use it! I brew all extract using any variety of liquid or dry...

    Real Ale Bitterness Questions

Ahh yes the Munich has a bit of extra colour(I recently used it myself)

About to make My first attempt at hopping

Probably could have done with a bit more hops( the Saaz steep), and some dry hopping. Hops aroma's tend to dissipate over time, So if you add a bit more it will be stronger initally( the hops flavour./aroma) but will mellow and/hang around for longer. I'm biased as I love hops so If it was...

Mangrove Jacks Ginger beer...What is the sweetener?

I would suggest the sheer volume needed/cost of lactose is the main reason. I added 1 kg of lactose to one of my ciders with a result that I'm my opinion needed a bit more sweetness. I've ended up back sweetening the whole batch as I drink it. Even my other half thinks it should be sweeter...

    Real Ale Bitterness Questions

My one experience with the coopers real ale can is the same, quite bitter. It does mellow a bit with time though. The steeping of the hops would have added extra bitterness, and from what I'm told doing it in plain water vs a wort solution, can cause extra astringent flavours that are...

    Hop Hog Extract Recipe

Ok so I bottled my version of this tonight. My first all extract recipe! My recipe was as follows: 1.5kg Briess Munich 1.5kg Coopers wheat extract 400g medium crystal ( I wanted a bit of extra colour) 10g Galaxy @ 30 minutes 15g of citra galaxy and centennial each @ 10 minutes 15g of citra...

    Flat beers

Could you describe your bulk priming method. Mine is as follows. Boil an amount of water(Approximately 250- 500ml) with measured amount of priming sugar. Allow to cool. Add priming solution to empty sanitized fermenter (bottling fermenter). Rack primary fermenter into bottling fermenter...

Mangrove Jack's craft series worth the extra $$$?

I cannot speak for the beer kits, but the cider kits are worth it in my opinion, for ease of use. The pouch plus a kilo of dextrose, and your done. Easy. All juice ciders are better, but need more effect too! Plus you can pimp the cider kits if you really want to. The cider kits leave me time...

Good Luck! Are you gonna dry hop?

About to make My first attempt at hopping

VR4king, if you're looking for flavour/aroma, I would not be boiling hops any longer than say, 15 minutes. Do a 15, 5 and 0 addition with those numbers ( 30g) each, plus dry hop the last 10g. If that doesn't do it i don't know what will!

As far as I understand it doesn't really matter, Amph.

About to make My first attempt at hopping

Dry hopping is the addition of hops, after fermentation has finished(usually day about day 4 - 7 of the process). this could include hops in the keg too I guess. Dry hopping adds mostly aroma with a little bit of flavour. Doing the Boil option adds more flavour, and some bitterness, and...
