    Should I Try again??

    I've never brewed one of these, but I suspect there's not much in there for the yeast to feed on. I'd suggest you need to feed your yeast with some yeast nutrient for it to get going. Others may have better ideas.

    Drinking from a batch of Belgian Pale Ale, very nice. Finished off off the last of a batch of Pilsner where I made some major muckups during the brewing process. Bottled a batch of Best Bitter today.

    Welcome. Mosaic is one of my go to hops. Others that will work really well in an US style IPA is Cascade, Citra, SImcoe and others like it.

    Dropping Temp Query

    Seems to be something that's not uncommon, because dropping your temp down to 13ºC at pitching isn't that easy, unless you've got good really refrigeration. The thinking is that the yeast will go into growth phase at the initial temperature, and then ferment cleanly at the lower temperature...

    Sure, why not? Go for it. At the start of fermentation, there's no alcohol yet. If you have enough yeast, I'm sure the Coopers yeast will easily manage to ferment to 5.6% ABV.

    As far as I know Cooper's use the same yeast in all their beers.

    Pale Ale is preferred simply because the Pale Ale is a lower ABV than the Sparkling Ale. It is thought this will give you a less stressed yeast, and thus a healthier yeast to cultivate.

    There are some recipes on Brewman's website, but you need to join to get access. They're pretty simple recipes. For the Pale Ale it is all Ale malt, Super Pride hops to about 26 IBU, and cultured Cooper's yeast, and a reasonably high calcium content is recommended. This is one of MHB's recipes...

    You're on track, certainly. Enjoy the beer once it's bottled or kegged and carbonated.
