i am guessing these would be calibrated at a certain temperature like a hydrometer, therefore you will need a few sets calibrated at different temperatures for different fermenting ranges, 10 degrees for lagers, and 18 for ales and so on.

Jonez, i will do this once or twice with the yeast, no i dont wash it but i do use it fairly quickly, usually within a week or two. been doing this for months and had no problems so far.

i usually have 24 or 25 litres in the fermenter, after i fill the keg i bottle every drop i can get, then i swirl the cake around and get two stubbies of yeast cake for the next two brews i do. yes im a tight arse.

if you dont have it already, download the trial version of beersmith and punch in the details and compare to the style that your after, very useful tool and i have had some good successes with my own recipes thanks to it.

always best to sanitize everything that will come in contact with the beer, best to be safe than sorry. most people use a no rinse sanitizer called starsan, im pretty sure your coopers kit came with a sanitizer so use it. sanitize everything, the caps, bottles, bottling wand, tap and your keg...

i would give the fermenter a swirl to bring some of the yeast back into suspension then wait a couple of days then take another reading. i personally leave the fermenter alone for 2 weeks before i take a reading. also in future i would try and bring the temp down closer to 20 for better results.

something to consider, some people use a collar so they can fit extra kegs in the freezer, also with a collar you can always drill another hole for another tap or more!
