D'oh i meant wheat malt extract :ph34r: why would you ditch the BE2 ive found it works quite well in improving the brew. My local mitre10 has a range of wyeast and (i think) brewcraft yeast i'll check it out. Also why would you wait a few days to add the honey doesnt it take longer to break...
My first attempt wasn't awesome either don't stress mate keep asking questions here keep experimenting and refining your process and find what works for you and you'll make some awesome beer.
I've being a k&k brewer for 2 years ive only had 2 or 3 batches that didnt work out but i figured out...
I had celery* shoved into my beer by some cheeky prick at the pub...........it still didn't taste bad or was it that i was already 3/4 pissed. :lol:
*It was at a Adelaide United pre-match pissup at one stage it was the craze to bring celery to the game due to chant copied from chelsea fans...
Yup near boiling and using rainwater phew im happy with that malben bitter is a very bitter beer by my palate anyway. :)

Don't use the sodium metasulphite (sp?) usually provided or they tell you to buy when your sanitising. I usually use this stuff called pink stain fairly expensive but lasts you ages if you don't go overboard with the stuff (it can ruin the carbonation of the brew learnt from experience :( ) on...
