In my opinion, for the cost of a couple of bunnings fermenters($15 ea with the red screw lid) it far outweighs the cost and time of brewing, bottling the finding it turned out shite due to infection caused by a coupe of old fermenters. my 2c. nick

In my opinion, i would rack off to a cube, then it should be fine. I presume you do not have temp controlled fridge, so althoh not ideal it prob woulden't harm. When you get back, bottle straight away. Or put the holiday off?

When i returned to brewing about a year ago, i had the same problem flavours as yourslf. Then i purchased a temp mate for my mini fridge. This has improved my brewing by leaps and bounds. (Also i can finally make Lagers)

+1 for the sydney weather. Im having a schooner right now, while the weather is still warm and the sun shining.
