    i am a fan of coopers, bottle conditioned ales The pale ale or mild are my go to session beers, and i do enjoy the stout and sparkling ale also keep an eye out for the vintage it will be a one off annual release.

    Dont forget about the Big W units $20 for 19L SS stock Pot, I would go bigger rather than smaller as you will more space to avoid a boil over (and this will give you more flexiblity in the future my 2c) other than that go the 15L one thing i have found a larger volume will be slower to loss heat...

    I have used bothe coopers and no name LDME in brews side by side and noticed no difference between the 2.

    I always found liquid malts to be more cost effective so i normally just use pale liquid as a base, it depends i gues on the turnover of the HB supplier your using. If in doubt go the tinned cans or the dried malts.

    The last time i did this it was greyish and smelt fine, could it be murky due to being roused??? If you are worried about it i would not use it and start another culture, i found it easier to do it with several bottle dregs, like 2 -3 tallies, more cells to start off with i guess.

    Have you thought about doning a 10-12L boil (as you are using mostly extract) with a gravity of 1.040 and using the cold water to bring the temp down as oppossed to no chilling? I thought this would stop you having an overly bitter beer at the end.

    I dont think the IBU will be 2 harsh as there is a lot of malt sweetness to balance it out in the kit, i am a big 2 can fan, i would reconmend just the 2 cans. Just remember as you have already talked about it might need some age on its side to get to its full potential.
