When Is A Bitter Not A Bitter

Good Day If it meets the style guidelines then it is to style. Using traditional ingredients makes it easier to meet the guidelines. Yes I use caraAroma for all my crystal requirements because I like it. All the best, Barry.

    1st Brew Advice....

Good day When I first started brewing I opened the fermented and took a deep sniff. I expected a rich beer aroma. What I got was two daggers of pain up the nose from the carbon dioxide. Taste the beer before you do anyhting drastic. If it tastes good , it is good. All the best, Barry.

    Kolsch

Good Day While not the same melanoidan malt can be used instead of honey malt, from what I have been told. I use melanoidan a lot especially for lagers. All the best, Barry

How Many Hydrometers Have You Busted?

Good Day I broke two when I started brewing again in 1997. I know this is tempting fate and Murphy but I have had the current one for 7 years. All the best, Barry.

Recording Your Brews - What Do You Use?

Good Day Sosman I noticed with your APA recipe that your 15 minute hop additions are giving you 50+% utilisation of your 60 minute additions. Is this from your research, reading or experience. I have always just divided the utilisation simply by time ie. a 15 min boil will give you quarter the...

    Belgian Dubbel

Good Day All this talk about dubbels got me interested so yesterday I brewed a dubbel and trppel for the first time in 3 years. Good Day Brew a few really good English bitters. Love this style but most of my many, many attempts are too ordinary. Try to brew a few different styles for the Bathurst Comp but running out time for the new early Feb deadline. All the best, Barry.

    Favourite Yeasts

Good day My favourite yeast is WLP San Fran for all lagers from a Bohemian Pils to a dopplebock, best at 10-12oC but good up to 16oC for us winter garage brewers. I have never had a "green apple" problem with this yeast so your experince has me wondering/perplexed. One thing about home brewing...

    Emegency Capping Question

Good Day For twist tops I set the capper so the bottle just fits under it and this gives a firm seal ( you can feel it when you lever down). All the best, Barry.

    Barry Cranston's Foreign Extra Stout

Good Day Snow Sorry to take so long to get back to you, been working. It is a bit hard to tell you about the contribution of flaked barley because I use it in all stouts. It is suppose to add a smoothness/fullness, a grainy flavour and aids head retention. A few kit stouts I have had the...
