I am still trying to perfect the Vienna style lager. My next efort I will be using 5kgs of Weyermann Vienna and 500g of Pilsner Malt (just for conversion insurance) and I was wondering about using 500g Weyermann Caramunich III and 500g of Melanoidin. But with all this grain the OG is up to 1063, too high for the style, and its starting to get a bit messy for a nice simple Vienna.
What are your thoughts on the Melanoidin and the Caramunich III ? as i have never used Melanoidin before.
And I was just going to use a single addition of Tettnang.

Try scrapping the melanoidin and caramunich, and make sure you use the right yeast!

I made one, around 50% pils and 50% vienna, using a bock yeast, and i came up trumps - the bock yeast giving the sweetness that you are trying to retain in the style.

i have to agree with dreamboat - your're after a malty simple style. start with a good pils/vienna base and add to that maybe 200g total of crystal and see what you think.
vienna malt has got a lovely flavour all it's own so i don't think you'd need much crystal.

have a listen to the basic brewing podcast on vienna lagers, it's really good.
 
Thanks boys, I guess the fact that my LHB Shop (Mark's, in Newcastle) has now got in stock just about every style and type og grain on the market, even the same stuff from diff. manufactures. I guess I just want to give it all a crack. Ha Ha.
Anyway I will keep it simple, and brush the crystal and just go the Vienna and Pils and a little Mel.
