Hi Ross

I am intrigued by your mention of Vanilla Mocha Porter. Care to share?
 
Hi SOG,

The recipe has been mentioned a few times, but you'll find it here with a few other specialty porter recipes. I didn't get round to adding the spirits as mentioned in this particular thread.

Looks like a great recipe, but at this stage I'm doing kits & bits with no racking/secondary.

Though you've got me thinking about how to use the vanilla beans. I actually think they'd go quite well in a stout to juxtapose the chocolate/coffee flavours (I'd probably forego the liquorice). I know some stout drinkers would consider this sacrilege but without experimentation we wouldn't even be growing barley.

Has anybody tried adding vanilla beans to a mini-mash? Will steeping/boiling extract the flavours or ruin them?

If you're interested in adding some vanilla to your stout, don't boil the vanilla, do one of 2 things:

1. Soak in some vodka for the entire fermentation time then add the vodka with your priming sugar to your bottling vessel, or

2. Add to your fermenter after a week and leave for a further few weeks as if it were secondary.

Sorry, I realised after posting it was the wrong forum but didn't think I could move it.

I have a second fermenter so it might be time that I started doing some secondary fermentation. Just need to get make my summer stockpile first.
