Sugar in Gluten free sorghum wort, and yeast nutrient

I have used Brewers CHoice Pale ALe kits before. I now what to look at some other recipes.

I have 3 kg of Breiss sorghum extract to make a 22 litre wort.

Questions:

1. The Brewers CHoice recipe for Pale ALe has no sugar of any kind added in the boiling process, only a small amount at bottling. IN the Honey ale kit, about half a kilo of honey is added. Some recipes I am now lookng at add sugar of some kind when making wort. SO why is no sugar added in the Brewers Choice Pale ale recipe? Does the sorghum extract supplied in the kit have sugar in it already? HOw much sugar and what kind of sugar should I add to the Briess sorghum extract when making the wort?

2. The Brewers Choice recipe kit supplies a yeast nutrient to use... I have been told beer brewers don't usually use yeast nutrient. Is it necessary? If so, why, and what brand is gluten free?

3 Also what is process of chilling to make a clearer beer and how does it work?

1. I can't speak for the kits. I've never used a kit, but they do contain sugars (adding more sugar just gives you more sugar). Just as sorghum syrup contains sugars. I recently made a gluten free beer based on 3Kg sorghum syrup, but added 350g maltodextrin and 100g dark candi sugar. These are not required.

2. Is it a gluten free kit? If I recall, DAP is gluten free. I am not sure about other nutrients. Nutrient is generally not required when making beer, but sorghum is not quite like barley, and nutrient seems to be advised with GF beers.

3. Chilling requires a fridge that you can fit your fermenter in. If you can drop the temperature of the fermented wort close to 0°C for a few days, a lot of the small particulates drop out of suspension. You will find sorghum beer to be hazier than barley based beers, so use of irish moss, chilling, and finings are required if you need clear beer (I don't care that much about clear beer).

I assume you're talking about sorghum extract there? One characteristic of sorghum malt is that it produces much clearer beer.

My bad, I meant to say extract. Sorghum malt may well make very clear beer, but not all of us can make our own sorghum malt!
