hello to learned recipe masters
I brewed this recipe and in it's last bit of fermentation
og 1.049 after 6 days 1.007-8
I tasted the hydro sample and it tastes terrible very alcohol taste
ferment temp close to 18 deg +/- 0.5
sitting on the bench now at ambient temp 25-26 and hoping it cleans up over this week
if it doesn't i'll probably dump it
any thoughts on recipe I've never used f/wheat before

Sounds like fusel alcohols you got there. I can't read the bsmx so I can't comment on the recipe/mash/etc. what yeast did you use and what was the pitching rate?
 
Too early to call it at 6 days. Higher alc beers can be harsh first up. Sure it will mellow and you will be calling it warming later on rather than harsh.

yeah maybe i'm getting ahead of myself /panic
the yeast is recultured coopers
the only difference to some previous recipes is the flaked wheat and more por hops
the rest of the grain bill I've used close to many times
this is only my second brew with temp control
kk temp control sensor reads19 to my temp probe reads 18 so I set kk @ 17.5 split the diff
pitched yeast at 16 took a good day and a bit to get action
 
well what a difference a couple of days makes
someone should have said dont be impatient !
took another sample this morning down to a good 1.006 and starting to taste like the goods
in hindsight it may have been slightly under pitched but not by much
will leave on the yeast cake till probably sunday when i'll rack to second fermenter plus finings bottle/keg next week early
gotta do a kegs so i can force carb and sample the goods
i'll refer to taste then since I have the commercial drop in the fridge
things lookin much gooderer now
 
Glad it cleaned up for you, leaving it on the cake should finish the job. Temp was all good, so my guess is slightly under-pitched, next time build it up a little bigger or try a vitality starter.
