Fellow brewers,
I usually use us-05 and when the brew has finished primary fermentation I drop the temperature down to 1 degree for a couple of days. This seems to clear it up nicely. I then bottle and wait a few weeks and I get nice, carbed beer - no problems.
My last beer was a dark ale. I used s-04 and followed the same process, but it doesn't seem to have carbed. The beer seems to be pretty flat. It has been cold here but I have the inside. The only thing I can think of is that the s-04 doesn't like the 1 degree temperature.
Any ideas/suggestions?
