Is a protein rest at 52 for 15-20mins and then 60mins at 66 or 67 and appropriate mash shedule for a CAP?
I am planning to do 2. One with 20% rice at 1.047 OG and 25 IBU's and a second with 25% Flaked Maize at 1.055 OG and 37 IBU's.
I am not sure there is much point in resting at 62 and then 72 for various times but I think the protein rest may help with the adjuncts?

My understanding was that a protein rest was meant to deal with high protein levels in the mash, and that the whole idea of the adjuncts in CAP was to reduce protein levels present in American six-row malt. I'd be surprised if a rest is needed.

The 62/72 rest schedule seems common in German beers. I guess it might improve fermentability, but I'll defer to other opinions on that.

Exactly, my reasons for the temp step would mainly be to improve fermentation.

I've never found a need with these beers for a protien rest...

In fact, I wonder if protein rests actually cause more harm than good with modern malts. If the protein levels are already low, won't breaking down extra protein adversely affect head retention?

I nearly always do a protein rest and have never found head retention to be an issue at all.

I must admit that I have never had any head retention probs with protein rests even up to 30mins. I think in an effort to make it easy I will just do single infusions.

No mate it's the last of some B&B I got in the last Sydney bulk buy. When Mark get's some more Weyerman Premium Pilsner in I will take a bag or two off his hands and put it to good use, as I have heard some good things about this stuff.
Since I got this 4 keg draught system up and running my worst fears have been confirmed.............I should of known SWMBO was on the case when she asked how many cases of beer was in a cornie? I new I should of said a six pack, but when I told her about 2 cases shes was horrified to work out I am drinking about a case a week. But as I keep telling her, its all her falt as prior to HER buying me the Coopers kit all them years ago I was a x-mas case a year drinker. So it's her fault!

Normal for blokes like us though!
Her family are tea totlers (I can't even spell it) they think that I brew to supply all the sub-division I live in!
 
That's why you set your draught gear up in the garage... Walk down. Sneak one in. Bring one up! B)

Have that pint sitting there while you tend to the dogs and the lawn and drain. Then bring up a full one. :lol:

Edit: To keep it on topic. I agree with the non protein rest camp if you're using flaked maize or rice. Even though I prefer a protein rest in my regular beers.
