I have got a double brew day coming up and have been looking thru the site at the mash temps u fells have been using for Vienna style Lagers and Doppellbocks and was amazed to fine that they range from 61 Deg C thru to 68 Deg C. and I am talking about Single Infusions.
What I am planning to do is do both brews as NO CHILLERS and dump in the pool for a wile to cool as my fridge is CCing another brew. I plan on doing the Vienna first with the Wyeast 2206 and then when its done dump the Doppellbock on the cake. Anyway what are your thoughts on mashing at the lower and of the scale like 62 for both brews?

Steve.

I wouldn't mash that low for either brew, typically a vienna you would mash around 66-67c and a bock around 68c. Depending on what malts you use the temperature can be higher or lower at the most a couple degrees and never lower than 66c for either brew.

Good Day
I would/do mash at 66oC for these styles, let the malts show there character. Higher temps can make them a bit cloying.
