Bintani maybe? If not, gelatanise polenta - pretty easy to do.

Scotty

I don't think I've seen malted corn on Bintani's stock list? - I'd just use some polenta as Scotty suggested....

Is it possible they mean flaked corn? The corn itself is not malted, but relies on "borrowing" the malted barley's enzymes?

Why not use air popped corn? Only costs $1.50 per kilo at the bulk goods store up here. Polenta is a good idea, but it is fairly exy if you will be using alot.

Ross sells flaked maize - this is easier to use then the popped corn and achieves better results

i agree. i was getting a popcorn flavour, even though it's sh!t easy to use.

Problem with that is it costs about $1 per kilo just to have it frighted up here. Of course if you are local it is a much better idea, but I can nearly buy the popped corn for the cost of freight ;)

Thanks for the tips guys.

Do you have to boil polenta first or can you just throw it in with the mash?

I boiled mine first, just like rice and rolled oats. I usually cook it up in a thick slurry like gruel.
