Dunno, looks like sewer water. Why are you using bread, some kind of prison brew ?
It's a traditional North Eastern European (Russia/Slavic, Scandanavian, etc) drink, low alcohol, sweet & slightly sour
I've made some from my late grandmother's recipes (1st generation Australian from White Russian parents) and love it
I'll be making some more now it's getting warmer, it's very refreshing
It CAN be made from beets and other sugar sources, but most of those recipes you'll find are more new style hipster recipes verging on being kombucha

is it ok for it to be filtered via cheesecloth or not, I saw youtube short saying not but the video i used didnt specify

Is that that white thingy fat from bread or something? i am scared it is mold.

that does look like yeast at the top, how long have you left it to ferment
What was your cleaning/sanitising regime?
