I think I've cracked this recipe, always brewed Nelson alone, however felt like something was lacking.
This is my recipe:
Grist:
94% Pilsner Malt
2.5% Carahell
2.5% wheat malt
1% acid malt
Hops:
10 IBU @ 60 min (Nelson)
0.5 g/L Nelson, 0.5 g/L Riwaka @ 30 min
0.3 g/L Nelson, 0.3 g/L Riwaka @ 15 min
1 g/L Nelson, 1 g/L Riwaka @ 0 min
2.20:1 Chloride/sulphate ratio (131 ppm: 60 ppm; 92 ppm Ca2+)
Yeast:
34/70, 12C 10 days.
