Interesting point that James made about adding flameout hops. He suggests adding them when the wort is around 50c to preserve the aromatic oils that boil off well before 100c.
 
I have performed a hop steep at 72-74C as I thought that most hop oils had a flash point above that temp. I may need to try 50C now to see if it adds anything.

Just realised I wasn't completey clear. Only some have a boiling point less than wort so it is only those oils that will benefit from the 50c steep.
