My fermenting fridge, which can hold a single fermenter, is currently full. I'd like to start making another beer and so was thinking I should try making one that would suit a mid-twenties ambient temperature. So, I'd like to make a Belgian ale. Something along the lines of a St. Bernardus 8 or a Westvleteren.

Anyone got a recipe? I've never made a Belgian ale.

There are some great recipes on this site, but be warned that it is best to start them cool (say 18C) and allow to slowly rise to mid-20's over a week. Pitching warmer will likely give you too many esters and high alcohols. What about a saison?

I have a good one for a tripel, strong golden and another for a quad.
Quad needs lots of ageing to come into its own, tripel and strong both require a few simple steps, none are fermented at ambient.
If you need to ferment at ambient, I'd suggest saison instead.
 
Hmm.. not really a saison drinker although I could be! I think I need to figure out temperature control for a second fermenter. I'll have a think about that! The candisyrup site looks good though, a bit of inspiration there.
