I recently posted a recipe for a ginger beer which I am now drinking. linky

It tastes ok for the first few seconds but the sacharine after taste is terrible. At least it is for me anyway. I can't stand diet soft drinks or anything with aspartame in it.

The brew kit I used for my first attempt was the Coopers GB. Today I bought the Morgan's one which also contains fake sugars before coming home and tasting this one properly. There is another brand at my HBS which does not have any sacharine stuff in it. It is in a mostly white cardboard cylinder can with green lettering and sounds like it just has packets of powder in it when you rattle it. Does this ring a bell to anybody that has used it?

Has anybody else had the sacharine blues with ginger beers?

Recently I've done three GB all Coopers but all different recipes.

#1 Jan 07 - Mixed in fermenter up to volume bulk primed and bottled
#2 Jan 07 - Added extra ginger, spices, lemon juice & 1Kg Raw Sugar Fermented for 9 days bottle primed
#3 Jun 07 - Added 1Kg Raw sugar & ~150g (what was left) Dark Brown Sugar Fermented for 11 days bottle primed

#1 & #2 both had that horrible aftertaste associated with Diet soft drinks. It did fade as the batch aged to virtually nothing ~ 6-8 weeks IIRC

#3 was drinkable very early compared to the previous two no noticeable aftertaste at all - the biggest difference would be better temperature control in June

I've also noted the problem and am looking at ways to get arround it. I was contemplating doing a proper extract GB but over priming and pasturising the bottles once conditioned. This way I avoid artifical sweetners and stuff like lactose.

Has anyone ever done bottle pasturisation here? Is it really easy as it sounds?
