The big breweries have done such an amazing job of telling people what they want to drink through billions of dollars in marketing that they've convinced the world to drink their beer too cold and too light. They brainwashed most of us into thinking the lighter a beer is the more refreshing and satisfying it will be. The way they make their beer light is by reducing the percentage of the higher-quality, more-expensive base grain - barley, which was the exclusive source of fermentable sugar in the original pilsners. By replacing a large fraction of barley with cheaper sugar sources like rice and corn these brewers could make beer a lot less expensively (which leaves more money left over for advertising). These cheaper ingredients make the beer so light that it couldn't possibly be offensive to anyone. How can something designed to be completely inoffensive to everyone be worth coveting by anyone? Today the average American is bombarded with over a million advertising appeals every year. The big breweries are as guilty of any company in any industry of brainwashing the consumer through the sheer oppressive magnitude and breadth of their marketing efforts. They are selling a brand name and an image with such zeal that they have forgotten about the product behind all of this horseshit and hyperbole - the beer itself.

Dogfish Head ************* is the beer itself. A true Pilsner brewed with 100% Pilsner Barley, and impressively hopped using our self-developed continuing-hopping method. At 9% abv it's also nearly twice as strong as the American, wanna-be pilsners made by the big boys.
 
hmm, interesting..!
i note dogfish spend a huge 2% of their annual revenue on advertising.!
Sam may have to change the company name now though... "Dogfish Head.. Handcrafted ALES" doesnt quite fit now.
 
I'm not sure if the name "Dogfish Head *************" will market to well to the megaswill drinking public of the US
 
great name, reminds me of this Chinese restaurant in Burwood called "Golden Stream" that always cracked me up - (named after the bestselling novel by I.P. Daily)

looks like it could be a tasty beer. DFH are always stronger on concept than on content though

I don't as such - As soon as it's fermented out, I keg & carbonate - I've found lagers age better under gas & gives you the chance to taste while it's happening - If it tastes great, I drink it :chug:

But please don't hit the "I feel lucky" button.

I'm a bit ambivalent towards the "imperial pilsner" style. Admittedly I have never tried one but it does not strike me as a style that would take well to ramping up like that.

Looks pretty good. Sub in some NZ Sauvin for bittering instead of the Saaz B. Nice.

For my Imp Pils I used

14 gr Sauvin 13.2% @ 75
64 gr Czech Saas 3.2% @ 60
40 gr Czech Saas 3.2% @ 40
20 gr Czech Saas 3.2% @ 15
64 gr Czech Saas 3.2% @ 0
26 gr Hallertau Aroma @ 7% Dry

After a little lagering and ageing it was fantastic. Even Gerard liked it :p

So for yours I'd go 50/50. Bit unsure of using Sauvin for more than 20 odd IBU for bittering.

Just put down today:

Doing a Nelson Sauvin single hopped Summer ale tomorrow, so decided to stick with all B Saaz. Never know, might add switch NS flowers for the dry hop...

Patience yes, Just pitched 2 x unhydrated Saf 34/70's - finally reached 1020 today (9.2%) - Not sure it'll need dry hopping the BSaaz is very dominant - might dry hop with some Nelson Sauvin flowers....
