How does the BB pale malt rate in a pilsner?

Queried Cryer Malts re Galaxy previously, this was the reply:

Galaxy is the variety of Barley used to make this Pale Malt, other varities used in Australian Pale Malts are Schooner, Franklin, Gairdner and others.

The terms Pils, Pilsner, Lager, Pale (in Australia & NZ only) refer to a a generic malt approx 3-3.8 EBC colour. Have a read of the attached catalogue for further info.

In Europe they are more specific with Pilsner/Lager malts being 3-3.4 colour and they have Pale Ale Malts in the 4-5.5 EBC range. At some stage in Australasia's malt producing history they have dropped having 2 types and gone for a one size fits all approach. Hence Pale malt at 3.5 +/- 0.3 for all beers made, a relatively recent addition is Ale Malt produced in Australia which is around 5.0EBC.

So Screwtop - would a 25kg bag marked Cryer Pale Malt actually be Galaxy?

Cryer pale is a pils malt as well, but it's not galaxy. Galaxy will finish drier than the pale...

Used Galaxy for my first two AGs. Good stuff, both finished at 1.008. Clear, Crisp etc. Also used a little wheat and rice
 
That reply was from David Cryer of Cryer Malts. If it's Galaxy then it's a GP Malt made from Galaxy Barley, if its Pale then it's a GP made from some other variety. My experience using Galaxy does not parallel that of Ross re it finishing dryer. I find this depends on mash temp much the same as other malts. As for it finishing lower, I find that depends on the attenuative qualities of the yeast used as much as any other malt also.

I assumed ross was assuming ceteris paribus. I've never used Galaxy myself but it's about what I'd expect from it too, at least from what I've heard.
 
galaxy was by chance the 2nd bag of malt i bought.
great for experimenting because whatever you do gets good efficiency.
throw all kinds of weird stuff in (or not if the brew police are watching)

A good example of all being equal (or nearly all), tried brewing two identical recipes one using Galaxy and the next using Golden Promise, missed Saccarification rest temp, Golden Promise was 1 deg higher @75.0 C but both finished at 1.012 using US-56 and fermented at 19.0 C.

Did you really mean 75 C? At 63-65 C Galaxy will be very dry.

I mash Galaxy at 63-65c for the first 20mins,then raise the temperture as I do for most beers.
Can't say it is more dry than any others,most of my beer lean to the dry side ;)
