After having perfected my Australian Ale Recipe (in my mind anyway) :lol: I have turned my sights onto the (in)famous Tooheys Old style of dark beer. In keeping with the Australian Mega brewery style of "don't make too many changes" I have basically just added dark malts to my Australian Ale recipe.
I decided to use Carafa to keep the roasted flavour to a minimum and added a touch of choc malt for that barely discernable hint of chocolate. And while my hops are probably not the right ones keep in mind I am only trying to approximate this beer by utilizing an existing recipe.
Any comments would be appreciated.

I'm sure it will be a good drop knowing your other beers Andrew. So if I take out the caraffa and the chocolate, then I'll have your aussie ale recipe ? will have to give that one a go.

I'd be dropping the wheat malt. I don't know if it happens to everyone, but every AG batch I've done with any amount of wheat has failed to drop bright. Old is clear. I'm sure Tooheys filter their beers, and it's possible there is something else in my brewing method causing the cloudiness, but still, I reckon the wheat might be superfluous.

It's mashing as we speak Browndog, nice coffee/choc aroma wafting from the tun. My Aussie ale recipe is in the recipe archive here Australian Ale, but that is pretty much it no choc malt or carafaII.
I am on the final leg of a double brewday :super: Australian Ale and the Old above.

Old is probably the only beer i drink when out. I do an old ale, which has only 120g carafa1 as the only dark malt. I also use 250g flaked maize, why, i dunno, but its a great drop, and when my psuedo lager ( 1007 ) is done, im gunna dump it on the cake. I usually use english ale yeasts, but i like the neutralness of the 1007. Oh, and the first time i made it, the colour after a month in the keg was very similar, a deep ruby red/black, and was very clear. Last time i swapped the carafa1 for roast wheat. Didn't like it at all, too harsh. Its not really to style, but its a nice drop anyway.

3.4kg Maris otter
120g carafa1
200g dark crystal
150g melanoiden
250g flaked maize.

35g cascade 6.6% FWH
35g Amarillo 7.1 % FWH

Whitbread ale.

That looks good too. Do you get much of the hop flavour/aroma coming through? I might give that a go. And your right, Old is not a style and is nice on tap!
Nottingham is a fairly neutral yeast and attenuates well too, draning the tun now and it smells great.

More flavour than aroma, but you could always add more i guess. I do a lot of FWH only beers, although, i dry hop in the keg more now, which is friggen great for aroma. You could probably do whatever hop schedule you usually do really.
