Howdy Brewmates,

I would highly appreciate some suggestions in brewing a typical Australien beer.

A little background:
as you know, its summertime in Germany right now.
My sister in law - normally living in Mackay/Qld - has just arrived for a six weeks holliday here in Germany.
Of course all her friends and relatives want to meet her, also a nephew (20 years old) who spent one year working in Australia comes over to tell everything he experienced there.

That made me an idea to organize a great summer fest under the motto "A hot Australien Summernight" :)
Right before her hollidays ends, I will organize a great BBQ with plenty of seafood - what is really a challenge here in Germany - and of course loads of beers.

The central topic - of course - will be everything around Australia.

So now I have to hurry up to create a somehow typical Australian beer and a suitable Label (Name) as well.

Recommendations about recipes and names are urgently needed.

Btw: I hope WhistlingJack will be back at that time from hes trip through Europe, so he may join us.

Well I think you need to call the BBQ Ozfest :D

AndrewQLD has a recipe somewhere for Coopers pale ale and I think that would be a good place to start.
 
Zwickel, if you're trying to impress a Queenslander, you've got to do a XXXX rip-off.

Cluster hops, red and white label, perhaps a picture of Crocodile Dundee or something.

Gee I'm cynical.
 
I agree with Jye,

Something like a coopers pale ale in such a short space of time would be the go.

Zwickel, Can you get your hands on any pride of ringwood?

I hop you get better help then this but I would suggest POR hops for bittering and maybe cascade or cluster form aroma.
Use well modified 2row malts and filter.
Now search for recipe like XXXX/ Castlemaine dry etc for QLD.
Grain and grape recipes
(1) AUSSIE LAGER

3500g Pilsner Malt
75g Crystal Malt
500g Dextrose
18BU Pride of Ringwood Hops
10g in Soak
1 Sachet Saflager Yeast

(2) AUSSIE BITTER

3500g Pilsner Malt
75g Crystal Malt
500g Dextrose
22BU Pride of Ringwood Hops all in the Boil
1 Sachet Saflager Yeast

Just make a Munich Helles with Carlsberg yeast or W34/70 with a low mash temp, add about 15% cane sugar, call it a Hahn, Boags or Cascade premium knockoff. Make sure you use POR for bittering (if you can get it, otherwise Magnum would do fine) and something noble to finish off.

A typical Oz lager pretty much follows the lead of the Americans, except we use Cane sugar to balance out the high dextrin level of our typical (old schooner variety) two-row malts, whereas the Yanks use corn and rice to thin out the high protein levels of their six-row malts.

You could call it Zwickel Premium Helles, that might be a bit too Deutsche for him though :)
 
I know i have gone on and on about this recipe but i will say it again.

It won 1st place in the pale ale class at NSW state champs and got a 4th at aus nationals.

simple recipe and great to drink. friends (brewers and non brewers) described it as mothers milk.

95% pale ale malt
5% wheat malt
SG - 1.050
10 IBU Pride of ringwood hops FWH in a 60 min boil
17 IBU POR 45 min boil
firment with a cleanish dry ale yeast like 1318, 1275 or the yank starins if you want.

It sounds too simple to be good but it knocked a lot of APA's off their blocks in the catagory.

This looks the goods to me - Would be perfect if you could reculture a Coopers Pale Ale Stubby as the yeast.

Zwickel,

To make anAussie beer you need to add about 15-20% cane sugar. Invert it by adding it to water until dissolved then throw it in the boil.
Myself , I would say that the seafood on the Barbie was Aussie, but whilst in Germany, Das ist ein Reinheitsgebot bier and smash a couple of stiens together. Will probably suffice.

thank you very much mates, it certainly helps me a lot.

So my decision is made, Im gonna do an "Aussie Bitter", thanks for that advice.

But, please tell me why one should add sugar to it?
Is there not enough malt in it?
Can I not obtain the desired FG by using malt only?
or is it on account of the special flavor of cane sugar?

So Im going to start the brew very soon and part of the beer Ill fill up in bottles, but most of it will be served right from tap.

For labeling the bottles I got a special idea, for that I need your allowance:
If you dont mind, Im printing out some of the beautiful labels from all of you, shown in the labeling thread.

The idea is, to print out many of that beautiful labels and glue it on the bottles, so every bottle has a different label, so the guests may see how wonderful our hobby has grown in Australia, anyway it has nothing to do with the beer inside the bottles, just for fun.

@Whistlingjack, Ill inform you via skype, hope the date will match.

Hi Zwickel,

I have come in a bit late but here is my "Aussie Style" beer that is always on tap at home. I don't know if you can source Nugett hops but Chinook or Galena are good substitutes. The Cluster hops are not interchangable as these hops give the beer it's characteristic XXXX flavour.

Our psudo lagers are thin and less malty. If it were me coming to Germany I would like a nice crisp lager of about 4% ABV. Hop with POR hops sparingly maybe 5g with some Nugget to 20 BU for bittering and Cluster for aroma.

I'm a Queenslander and quite like AndrewQld's Australian Ale Recipe.

The Australian Ale sounds really interesting to me, but I afraid, Ill not be able to source all that special ingredients.
So its easier for me to do the Aussie Bitter, furthermore I have not so much time anymore.
To find the cane sugar is not a problem here.

Anyway, at the end of this year Ill be in Australia again and this time Ill spend more time to "study" the authentic Australian Ale :)

@screwtop, I have to wean WJ from Berlin Kebap ;)
no chance to find a Roo around here :p
