Just opened a bottle of ale I brewed back on 7th July 2009, and its blown me away how tasty it is. Thought Id share the goodness

100g Crystal Malt
50g Chocolate Malt
30g Black Malt
Steeped in 1L water as warming up towards boil over 30mins.

Grains removed at 30mins (poured through sieve into boil pot).

Added to this was 1 tin of Cascade Golden Harvest
250g Light DME
500g Dark DME
and volume made to 8 Litres, brought to a vigorous boil.

25g Hallertau added boiled for 20mins

Then added:
1.4kg of Honey
25g Hallertau
Boiled for a further 5 minutes.

Made up to 22 Litres OG1.058
Fermented with 3 sachets of Cascade Homebrew Yeast at 18oC.

I split it into two x 10 Litre (ish) batches for dry hopping, and to this one I added 15g Amarillo for a week of dry hopping.
Bottled on 25/8/09 after a month in secondary.

This ale is a beautiful mahogany colour, a hint of honey on the nose, with a great bitterness (I guess about 36-40 IBU), a subtle fruity front and malt and honey on the back (I think!). Its also my first beer to keep a beautiful head until the bottom of the glass!

I hope my records are accurate enough to recreate this again, should be ready in time for early spring!
