60 Hop Additions!

Evening all!!

I was reading about the Dod Fishhead brewery over in the states and i came across an IPA they brew which has 60 hop additions through out the boil. (1 a minute!), the brew is hopped to 60 IBU's. I think with American hop varietys, no doubt chinook and Amarillo some where in there.

I have not tried the beer...yet.... but love the idea behind it. I have no idea what the grain bill or the malt profile of the beer is but i'd love to splash out and try brew a beer using the same concept. it would be a good test of my orginisation and concentration during my brewing. it would also keep me busy during my hour long boil instead of sitting back, watching the steam roll of the kettle and sucking back brews!

so has any body got any ideas on where to start formulating a recepie like this? I guess I would start with a normal bill then start adding hop additions every minute till i hit 60 IBU's.....Its is the size of the additions which I am most confused about. eg would my first 15 or so be larger bittering additions?? Im sure there are loads of factors to take into account.

Has anybody sampled the dogfish brew? have any of you attempted a hop schedule like this? has anyone got any good starting points or advice?

Have a search for '120 min IPA' in the above search engine, and it will take you to a thread on Dogfish Heads 120min IPA, which I believe is just the even more sooped up edition of the beer you read about.

Haven't tried one, or brewed one, but have been thinking about it for almost a year now since first doing some reading on these beers.

I think Fourstar may have done one? Or at least he sent me a link to some recipe's.

Good luck. Do as much research as you can first, as it's a lot of dosh to splash out on hops (though would be worth it if you pulled it off.

The balancing of the beer is an issue, as you need high alcohol, and body to meet the hops bitterness, and flavours.
Incremental feeding of the yeast with simple sugars seems to pop into my mind while I think of this, but was a while ago when I was reading about them.

Others will have more to add.

I was planning on doing one with an aussie theme, Ode to 60min IPA. The difference between mine and theirs was with 10 min additions to make it easier. The hopping idea was to get X varietys of hops and either blend them and add them at the 10 min intervals or split them into hop types and reserve for bittering flavour and aroma by hop type.

I still have not completed this beer but i think i'd jus go the blended route for simplicity and someting different. I have however made a '666' AIPA, (or close enough). 6% Abv, 6SRM and 60 IBU. It was my vic xmas in julsy swap beer this year and had some decent reviews. Its also in the recipe database if you are interested in that.

dogfishhead 60 min IPA clone


I am doing a 20 litre batch of a 60 min pale ale tomorrow...just doing continuous hop additions of 5g of galaxy. One addition at 60, 50, 40, 30, 25, 20, 15, 10, 5 and 0.

Will see how it all goes.

Great to see you guys talking about this style of hopping, we at Kooinda are looking at releasing a 5minute American IPA with additions every 5 minutes using all those wonderful American hops. Cant wait to here the feedback on some of your own styles. Open to any suggestions for our 400 litre "Kooinda IPA 5 minute Hop Hurricane" as we are still deisgning the beer malt profile and hop styles, PS there are some great youtube videos of people drinking dogfish 120 IPA and the like. :D

Hey Trav!

There are alot of opinions on big AIPAs to help the hops shine. Some are akin to purity with nothing but a bulky Base malt/specialty base (vienna, munich) grist only. Some think it needs some crystal (personally i like crystal in my AIPAs, just to add some complexity to the malt profle.)

Unless you want the beer to be in the upper ends of the ABV (which might be a tax issue for you guys) i'd probably look into adding a little crystal over just base.

Another option if you are wanting the malt profile to be 'pure', i'd look into a decent chunk of carapils for body if using a low mash temp or just to mash hot to help keep the FG up to balance the hops.

So many decisions boys, brew a few sample batches and send them my way. ;) hahaha

I did one a long time ago the recipe here explains how I went about how to record, measure and add the hops. I used a bigger addition at the start for 25 odd ibu worth. Flame out additions need to be bigger too.

well its only 50 grams of galaxy in a 20 litre 1.050 brew...we'll see how we go.


Ah, a little light on then. I was expecting something like 150g+ of hops. Masivly late. Fruit tingle beer!

Maple has been convincing me to try this method. Got to admit it has me very intrigued and just a little curious. I might just have to give it a go. Answer me this please kind Sir's to work your bitterings, flavour and aroma hopping I am guessing that you work those out as normal 60, 30, 15 etc etc and then divide those hoppings into the 1/5 mins intervals? Or not? Is there an easier way?

Most of the American IPA recipes ive seen, as fourstar says, have a big chunk of carapils, up to 7% sometimes, and a bit of Crystal 40L, ive personally used carapils + carared with good results!!

Id say the easiest way would be to say pick the amounts for all your additions, like what jayse has done? Then up the bittering hops to your desired IBU?? But im not sure, ive never brewed anything with this hopping schedule but might have to give it a go...

Chap chap, less posting, more brewing mate... As for how to do it, I've done it by taking the target OG, figuring how many IBU's I want in it, figure out what hop characteristics I want, and just mess around with promash until it comes out ...then throw that to the wind, add another handfull of pellets, lump em all together and just start chucking pellets into the pot every 5 seconds or so.

@Maple... yeah yeah yeah I hears ya mate more brewin' less gas baggin' but I reckon I'm gunna give this a whirl next brew I might re-do that double IPA I did with Reviled :icon_drool2:

there is an excel file floating around here that helps with mulitple hop and multiple hopping regimes...
 
The main issue as I see it is the danger of completely overbalancing the beer to the hop side. Yes, it's definately hop dominated, and is meant to be so, but you would need a decent malt backbone to it, to maintain a semblence of order there. Looking at Jase's recipe, you'll see that there is a fair whack of 'malty' malts in the grist to achieve that, and I have no doubt that it would have been a good beer...hoppy, yes, but enough malt behind it to keep it grounded. Just keep that in mind, and you should be 'right.
