What does chloride to sulphate ratio mean?

I’m in Brisbane and want to try a NEIPA and it seems I have to be very specific about the above ratio. No idea what it means and how to get it etc? Podcasts I listen to (Brülosophy etc) all insist about the importance of it. Does it matter? If so, how do work it out etc? The books confuse me...

    O2 and CO2

I’m mainly a dry yeast kind of brewer and I generally just use the aeration wand to stir the crap out of the wort. At 1.050 ish OG I figure it shouldn’t need much more to kick the yeast into gear. I don’t degas beer like mead so I was thinking only for dry hopping etc where I have to take the...

    O2 and CO2

I hear people talk about adding pure oxygen to their wort, as well as using CO2 whenever they open their fermenters (for dry hopping) etc. Where would I get bottles of the stuff and are they critical to beer/cider/mead?

    2019 Hop Plantations

All? Any? I’d like to have a ready supply of bittering hops as they seem to be the most regularly used varieties - so any of the Cs I guess I see in your bio that you may be in the fire zones. Hope it’s all ok for you mate

    Looking for dry hoping advice

What about using gelatin as a fining agent? Would that grab the hops (assuming pellets I suppose)?

First run at BIAB - recipe questions

I've seen Brewer's Friend but will have to look at Brewfather. I have also just downloaded the Ian's spreadsheet. Looks pretty swish - he's done a good job for it to still be current however many years later. Thanks

First run at BIAB - recipe questions

Do you recommend a particular App for BIAB specific brews?

First run at BIAB - recipe questions

This is one of the easiest and simplest explanations for BIAB that I have come across yet. I have also just moved to BIAB, with a 50 litre keg with the top taken off. It is hard to understand what is necessary for a good brew with a BIAB, compared to the 'traditional' setup with all the tuns...

    Simple sweet cider

The preservative/pasteurisibg will also kill the yeast and therefore no carbonation. Unfortunately there is no way to make a sweet carbed cider/mead/wine unless you keg. That being said, you can add lactose and stevia easily enough, and I’ve read a number of people who do. I think that it will...

    Black currant other than Ribena

Yeah will have to use the juice. Hopped mead is really nice too.

    Black currant other than Ribena

Up here it’s only the juice. I’ll give it a shot with some cherries and blackberries in a mead and see how we do. Thanks

    Black currant other than Ribena

Are there any other black currant products other than Ribena for brewing? I see recipes from the US for mead which calls for black currant, but the only stuff i can find is the juice. Does anyone know if the berries are sold in any form here in OZ?
