So, I made a batch of JAO around 6 years ago, froze it to remove most of the water content, bottled it with some more honey and then left it. 6 years later, I have somthing that almost tastes like honey port. this is just a little bottle but I still have about 3 liters of it left. My next...

Hey guys, As requested I have an update. I decided before I jump head first into this experiment, I would conduct some research into what properties are known about melaleuca before I jump headfirst in and waste a batch of perfectly good beer... because of course, that would be a sin to waste...

So I have a big Melaleuca (paperbark) tree out front of my house at the moment... i swear all I can smell near it is malt. Im fairly certain most of you know where this is headed, but, has anyone tried using roasted Melaleuca flowers in their brew? I was thinking about dry hopping at the end...

Jao The Ultimate Beginners Mead Recipe

Well, it has been 3 months since I bottled the 25 litre batch, and am impressed with how it has matured. My only regret is that I was (again) inpatient and probably bottled a bit too early. That being said as per discussion above, if I didnt it would have been completely ruined.

Honey Mead. Some may call it Ambrosia

Also 1 to 2 cloves per 5 litres... but no more. It will overpower the flavor too much.

Honey Mead. Some may call it Ambrosia

Guys, also dont be afraid to spice your mead! You will be amazed how a few cinnamon sticks and some cloves add to the flavor! Also, when bottling, put a vanilla pod in a few of them and save for special occasions... they are the best IMHO.

This is my first attempt at brewing, and was advised to use this as a starting point. I am now in day 3, yesterday when I inspected the batch I noticed that the bubbling and frothing...
