    Is this where you siphon off a small amount, raise the temp up (to maybe close to the 30) and see if it ferments any more?

    I aerated the batch at the start, just manually with a big spoon etc. I added hops because i was adding a 2L starter and didn't want to further decrease the IBU of the beer as it was already on the light side in terms of bittering.

    Initially i used the kit yeast, so yes it could have been low in count, but it did start off fine. For the yeast starter i used a s-05 from the LHBS who keeps things pretty fresh and always refrigerated. I used about 400g total of the specialty grain.

    Thanks everyone...I didn't actually know what everyone meant when they said cubes, now ive seen some pics I realize exactly what they are... :rolleyes: Think I'll definitely pick one up. Aussie disposals have 25l ones for 13 bucks... As long as they are the right material I'll probably try one...

    FWIW to anyone who reads this, I decided to drop the coriander and use a small amount of ginger. So it's now a Summer Ale with a hint of ginger and orange. LHBS was also out of Amarillo so I substituted in cascade at 30 min and flame out and used some PoR for bittering. Ibu was still the same...

    My first kit was the coopers Mexican Cerveza brewed to what ever was on the instructions..maybe BE2 I dry hopped with some galaxy and it turned out very nice and drinkable..enjoyed by many over summer. I'd dial back the amount of galaxy I used or just stick with the recipie for beginners...
