    I took it was fg was 1020. A diacetyl rest should be done after fermentation complete. Either way recipe and details would be useful.

    What's your recipe? A dare say that your first batch has stalled due to under pitching or lack of oxygenating. 1020 sounds high unless it's a dopple bock or something. What fg are the subsequent beers finishing at?

    Do crystal malts add more unfermentables?

    The latest brew I did had 16% crystal malt. By far the most I've used in a beer. Pitched 1 smack pack of wyeast thames valley 1, no starter in 23l and fg was 1008. Sg around 1044 from memory. I always use pure oxygen to aerate wort before adding yeast and I reckon lack of oxygen is main culprit...

    You buy from overseas? I wouldn't always assume that they are OK to import. Australian quarantine laws differ from other countries and are very strict for good reasons.

    This is a good point. You can get in serious trouble importing seeds if hasn't been approved.

    If conditions are right 20min saccharification time should be all you need.

    Yeah, I dare say a lot of alpha activity will be occurring at your beta rest and probably only needs a short 5min rest around 70 to finish off what starch hasn't already converted.

    I'm curious to know if all starch is converted after the beta rest meaning alpha rest pointless. Especially for 50mins. Not having a go just curious.

    Base Porter recipe to build on

    No need to adjust malt bill to attenuate to lower gravity. Mash around 66/67 and pitch enough yeast and should be ok. I too like brown malt in porters but your malt bill is fine.

    Looks ok but you'll want fg lower than that.
