    Questions on my toucan stout

Ferment your ale yeast as close to as possible 18c (I have mine brewing at 20c or 22c as I have no means to maintain temperature in the cellar). The higher the temperature you brew at the more esters are produced giving your beer a fruity flavour. Your original gravity of 1.058 is good for a...

Pale Ale OG is 4.1 - what have I done wrong?

You have done nothing wrong here. It's how I started also. Your reading of 1.041 is bit on the low side in my opinion as it would finish fermenting down to 1.009 or so. That would give you a 4% alcohol beer, not a full strength beer of 5% (unless that is what you wanted). As you mention your...

Grams of castor sugar in carbonation drops

As I don't have a secondary pail/container I do stir it into the primary fermenter. I gently stir being careful not to touch the bottom, yes it stirs up some yeast and my 750ml bottles generally have about 5mm of sediment at the bottom. This has never caused me any problems.

    Coopers European Lager Suggestions

I will second Rohin's reply. I have made it also and it would give you a Pilsener style. 2 x 1.7kg Coopers European Lager 500g LDM I have dry hopped with 30g Hallertau (your Hersbrucker or Saaz would be suitable also) Steeping 200g or 300g of light crystal would help also (you may also...

    Munich Dunkel (using kits)

No-one tried this yet ? Here is what I plan to do: Steep 300g Weyermann Carafa Special Type II for 20 minutes. Boil the drained wort for 15 minutes with 15g Hallertau hops, then after 15 minutes, add another 15g Hallertau hops and take off the heat. Wait another 15 minutes, then cool the wort...

    Infection

Probably, in minute quantities but not like as in my photos. This was a first ! All my beers turned out well, no bacterial scum floating on top. Thanks for all your help again.

    Infection

Thanks a lot MHB. I have made 60+ batches and never had an infection. My last 5 batches have been dry hopped, never dry hopped before those. I have read that dry hopping rarely results in contamination. I do open the lid slightly ajar to take a peek, so I must have breathed into it. I did not...

    Infection

I am brewing an Australian Old style beer using Safale S-04 yeast. Brewing was as per normal. Here is my log: Day 7: Dry hopped. Tasted a sample of the beer and it was roasty. Day 14: Last check before trouble. Some small bubbles still rising in the fermenter, gravity 1.014, leaving it a few...

Grams of castor sugar in carbonation drops

I can't answer your question on carbonation drops as I have never used them. What I can recommend you try is bulk priming by boiling 0.5L water with 8g/L of dried malt extract. So if your fermenter is at 23L, you would boil 184g. I simmer for 10 minutes then let it cool (covered) to sterilise...

    Final SG question

Probably a bit late for a reply now, but sometimes it could take up to 14 days to ferment out. Your most reliable indicator is to take two SG readings approx 4-5 days apart. If the SG is the same, the beer would be safe to bottle. As your adding extra malt to the kit beer, your final SG could...

    Munich Dunkel (using kits)

I am seeking to make (as close as possible) a Munich Dunkel, mahogany in colour, malty sweetness and moderately hopped, using kits, malt extract, extra hops and Fermentis yeast. I do not have facilities to mash, I can only steep grain and dry hop. What kits and malt extracts should one use to...

    Coopers European Lager

Thanks hoppy2B, I have successfully brewed with this yeast. I made a yeast starter to being with. A large krausen had developed after 48 hours at 15c. At 11/12c the yeast was still happy bubbling away. I have not yet tried the finished product for flavour (just been able to bottle it). For...

    Coopers European Lager

I have read that some people think the Coopers European Lager kit comes with a lager yeast. I have a packet of it and it looks identical to the ale yeast packet (gold 7g sachet) supplied with the regular Coopers Dark Ale, Lager etc... kits. I am wanting to use the yeast as a proper lager yeast...

    Dark Lager (using Coopers Toucan)

Did you keep it to 18L so you could keg it? No, I only have bottles. I was aiming for the gravity to be approx. 1.050, as a lot of my other brews were weak in alcohol (around 21L volume). At 18L volume, I got a reading of 1.055 so I stopped adding water. I kinda feel like this beer would be...

    Dark Lager (using Coopers Toucan)

For those interested in a dark lager made on the cheap, here is my receipe that I made recently with a Coopers Lager kit and a Coopers Dark Ale kit. I was experimenting to see if these two beer kits could be combined and was pleasantly surprised by the outcome. Somewhat bitter, but goes well to...

How often to replace plastic fermenting pail ?

I have an aging (~ 30 years old) 25L plastic fermenting pail. How often would you replace it with a new one, considering that plastic degrades over time ?
