    Fermzilla

I have one of the original Fermzillas that does have stress cracks in the neck. Should I contact the NZ supplier for this or arrange someone to hydrotest it?

    Continued Fermentation After Racking?

Hi All, I am doing a Doppelbock using Weyermans Maibock LME and Wyeast 2487 Hella Bock limited edition yeast. Pretty happy with how things have gone so far. OG was 1.083 fermented at 11 degrees C. I did a diacetyl rest at 14 degrees at 1.045 then racked when the SG was steady at 1.029 (was...

Mead: How Long Does It Really Take For Fermentation?

I put down 35L of mead a couple of months ago with an OG of 1.120 and FG of 1.015 using Lalvin 71B. I followed BrewerPetes Nutrient addition recommendations but accidentily gave an extra dose 24 hours after pitching the yeast so 6 additions total. I put it in the brewfridge at 19 degrees and it...

    Stuck Mead

Pete, Did 100g and 900g water. Calibrated the refractometer to 10 Brix (wasn't far off) at 20 degrees. Hydrometer reading was 1.040 which was what it should be. So measured the must again which was 20.8 Brix and 1.051 SG which is consistent with 12.1% using that website. So a bit disappointed...

Also tried the refractometer on a sugar solution. 93g sucrose made up to 250mls was 39.3 Brix 93g sucrose and 250mls water was 26 Brix I used the Got Mead calculator to calculate the amounts. If I used it right, 93g of sugar in a Target volume of 250mls should have been 32.2 Brix so don't...

    Stuck Mead

I have put 97g of honey with 160mls water at 19 degrees and got a hydrometer reading of 1.141. The refractometer reading was 31.4 which seems too low (should be 32.4 according to chart). Both the hydrometer and refractometer measure 0 with tap water (17 degrees C). Doesn't sound like the...

    Stuck Mead

Well it has been a week since I added a new 71B starter to the must and the specific gravity hasn't moved an inch using the hydrometer. I may have not let the starter adjust enough to the added must as it seemed to be doing well and when i added the remainder of the must it lost its foam and...

    Refractometer

Thanks a lot Pete. I was putting in 1140 or 1.140 instead of 140 which was where I was screwing up. It makes more sense now and matches the hydrometer reading which hasn't moved much since the last week. Cheers, Moovet

    Refractometer

Pete, what conversion sheets do you use. Could you please tell me what you think my current gravity is on a mead and the % Alc OG- 1.140 Hydrometer During fermentation - 20.6 Brix ATC Refractometer I tried the website you linked but couldn't get it to make sense. Last hydrometer reading I...

    Stuck Mead

Well it has been about a week. I have ordered a pH meter and refractometer from the ebay guys BP recommends. In the meantime I have been taking a sample to my LHBS for pH readings daily after adding 1/2 tsp Calcium Carbonate to the must. After 5 additions it is currently at 3.65 from starting...

    Stuck Mead

Cheers Wolfy. Always dubious of the ebay gadgets that come direct from Hong Kong or China. Any idea on how the ebay refractometers perform? Cheers, M

    Stuck Mead

Hi Pete, You are onto it. Got a sample tested today at LHBS and it was 3.38 so most likely the problem. Do you have any recommendations for digital pH meters? I am colourblind and no doubt the pH strips will be a waste of time and money for me. Cheers, M

    Stuck Mead

Thanks Pete. Will give it a stir tonight with a bit of nutrient and measure the pH tomorrow at LHBS. Not in a hurry so like to avoid ec1118 if possible. It is supposed to be a wife pleaser after all. Cheers, M

    Stuck Mead

OG was 1.140 and after 4 weeks was 1.054 and after 5 weeks 1.052

    Stuck Mead

Hi Dave, Yes it is around 10% which is a bit below the tolerance range of this yeast - Should be up to 14%. It tastes alright but definitely a bit sweet. Cheers, M

    Stuck Mead

I put down a wife pleaser mead 5 weeks ago according to BrewerPetes recipe including the nutrient additions and aeration -did have one boilover during the last aeration though. As I had to use the brewfridge for a Dunkelweisen and Doppelbock, I took the mead out after two weeks for about 3 weeks...

Prioritising Brewfridge For Mead Vs Dunkelweisen

The fermentation for the Dunkelweisen picked up and eventually took about 10 days at 19 degrees. As the mead was still fermenting I thought I would put down an extract weisenbock on the yeast cake remaining which I did and it has come out very well with a similar timeframe. We did have a few...

Have I Made A Partial Doppelbock?

Baqtch volume was supposed to be 23 L but lost at least a couple of litres on the floor and with the yeast cake/slurry left from your dunkelweisen had between 20 and 21L left at OG of 1.087 at 21 degrees. Still have plenty of dunkelweissen. Very good and as I said, the weizenbock I have tried...

Have I Made A Partial Doppelbock?

Hi all, I overordered on my grain to do my first partial which was Boagsys Unkel Dunkel which was pretty good but lacked the full body finish I like in my dark wheats. I was wondering if I could try and replicate an Aventinus doppelbock/weizenbock so through the brew calculator came up with...

    Stringy Bark - Us05

Cheers Pete. Have ordered the siphon as the one I bought is crap. Haven't successfully used it to siphon anything so far which has been pretty frustrating. That wife pleaser mead should be coming up for racking soon (been 3 weeks) so will wait till the siphon arrives before racking it. I read...
