    Brew virgin from Melbourne

I suspect the yeast has stalled because the temperature is too cold. See if you can get a heat pad from homebrew shop or online. Repitching yeast will get it going again but you need to be able to maintain a warmer temperture. Good luck.

Airlock and bung keep blowing off carboy during ferment, help?

I'd make a blow off. Plastic tubing from hardware store and 2/3 litre container with water/sanitiser. Take the bung with you so you know the right gauge of tubing to buy.

    Too much Galaxy?

Fermentation will take some of the bitterness away. Give it some time and you will lose some more of the bitterness. Might turn out OK in the long run. I like dry and bitter especially in hot weather.

    fermentation help

Did you make a yeast starter? You need to use more yeast cells for a lager. I would reduce the temperture once I had reached my F.G and then reduce for conditioning.

    What will it taste like?

I'm pretty certain that i have a Brettanmyces infection in my Stout. I've looked at some pics online and they look very similar. I think it came from the oak chips i threw into the secondary. The chips had been dried, soaked in water and then toasted in the oven until they were scorched. I would...

    Are finings important?

I've been thinking about finings lately. Are they important? I've never used them myself as I rack to secondary and use bottles. So tha's essentially three filterings, four if you count pouring into the glass. At every stage there is trub left over and it's pretty clear by the time i get to...

Thought the act of fermentation rendered it safe to drink. Isn't that why they always drank beer in the middle ages?

    Coffee Stout Qs

Just made a coffee stout. About 200gms of Columbian beans in the secondary for 10 days. Beautiful taste, great carbonation after two weeks and lovely aroma. Buggered if i could get any sleep after the tasting session lol.

How many dried hop flowers in the boil?

Well i've harvested my Chinook hops and dried them. I usually bookend 100gms of pellet hops 50gm at start of boil, 25gm at 10min before flame out and 25gm at flame out. I have weighed my dried hops and are a bit underwelmed with what i thought to be a bumper crop. It weighed just under a gram...
