    Hoegaarden bottle with a different yeast than used for the main fermentation. If you want a Wit to grow from the bottle try La Trappe wit. I have had good results culturing from Rochefort and Westmalle.

    Alternatively stick it in the fridge for a few days, that slows the metabolism right down. The night before pitching take it out of the fridge and let it aclimatise. Pictch at room temperature and it will take off OK.

    12 gram is not a lot of hop to add to a 23 liter batch. Instead of using the teabags go to your LHBS an see what hop pellets they have. Take 25 grams of Saaz or what ever takes your fancy, boil for a few minutes and strain. Ad that to the wort, and I think you will find more aroma.

    If I'm not mistaken light strike requires sunlight / UV light... Alternatively you could wrap alu foil around the lamp, that way you get the heat but not the light..
