    you could try adding less priming sugar. also, are you sure that primary fermentation has finished? and are you adding enzymes?

    I think the general consensus is to use them late unless you are certain of their bitterness. And use about 8 times the weight of dry hops

    Duke of Paddy - how good is it - free hops! just hope they don't get too wet...fkn damp here currently Mr No-Tip. - as suggested, they might need some more water and maybe even give it some seaweed solution...i remember all of mine looking brown and sickly like that after i transplanted them...

    fark, i never thought about this...the last batch i dried were in the dehydrator for about 3 days, no heat just the fan they are mummified and have about 0.068% residual moisture...what have i done!?

    Just bagged some more offerings: goldings - 50g shown + about 30g I had to dry off site; chinook - 75g; cascade - 80g; POR - 15g offsite Still got some POT and goldings left to ripen, thats if they don't suffer from flood damage :(

    Fk yeah! I've just won the lotto therefore I can afford to hire a tun shoveler, a kettle scrubber and the best marketing team money can buy. All I would do is a bit of r&d with the head brewer then spend the rest of my time at dons cleaning racks and such

    Any chance of using a pump & hx? Recirculating overnight at above mash out temps would reduce even more time the next day whilst reducing your chances of unwanted things growing in your sweet liquor

    if you have the capacity to do doubles/triples/quads you can make a 'base' beer that gets a bittering addition and thats it, then when you need/want to ferment them, use argon's hopping method along with steeped crystal and/or roast malts as required to make various beers using the same base...
