    PS Hop varieties available are: US Cascade Spalter US Golding Northern Brewer Willamette These are the only varieties worth while importing, Ellerslie is best for other varieties AFAIK I'm basically looking to split cost on some US Cascade and some Spalter Cheers :icon_cheers:

    You could put a valve in at the low point of you system and pour out the remainder into a jug and tip it into the kettle for the boil... That is what I plan to do; collect all the precious wort I can. That is why my HERMS has a single coil with exit at the bottom so the whole system can gravity...

    I recall jamil zainasheff talking about sugar in one of his podcasts... He was of the impression that nasty bugs couldn't live in sugar rich environments... So boiling the sugar might not entirely be necessary. How many K&K folk get away without boiling the sugar and don't get an infection...

    I've had some sulphur in the early stages of ferment but it dissipates with time in the fermenter. The last one I brewed had a 1L starter pitched at 12*C then fermented at 18*C... Turned out nice, although the banana is quite subtle so I'm not sure if a higher temp would have helped pronounce it...
