i think you will be fine, i always ferment with all different yeast and ferment temps get down to 8 degrees at night here and have never had a stuck ferment. 15C should make it quite nice actually.

I agree the beers will settle out within probably 7 days or so, you should be good to start drinking at 10 days as long as you remember the flavour is gonna change as the beer will most likely still be a bit green at this stage but as time goes on it will develop alot more.

Dextrose is powdered glucose, under a microscope the molecules are exactly the same only mirrored. So one is liquid form and the other is powder form. Your recipe should work well but try adding a cinamon quill or 2. This will compliment wonderfully. Cheers jake
