    Gotta clean your tap sir. I keep a spray bottle of Phosphoric sanitizer on hand to clean my taps after taking samples. A very useful thing to have around. Just give it a blast or three right up the tap nozzle after taking your sample, it generally does the trick.

    It might be a few things but my guess is that it might be something in your fermenter. How long since you last removed and cleaned the tap? Don't forget to clean the thread the tap screws into as well. Those are both classic places for a bug to hide. Remove the tap, pull it apart if you can...

    I've got two packs of us-05 bubbling away in an American wheat at 14'c atm. Low and slow gets you a nice clean neutral flavor IMHO.

    2nd fermentation of a kit & Kilo

    +1 to this. Even an ale yeast is gonna sweat out some unpleasant flavors working at those temps. Getting it down to 12 - 14'c would be better but even at 18'c you'll end up with something akin to a california steam ale. I understand that they're brewed on lager yeasts at ale temperatures.

    It all depends on you efficiency but that above would be about a 20lt recipe. It's a solid recipe but I'd add 200g of flaked oats and 200g of flaked wheat to that too just to round it out. Maybe even consider some citrus zest at the end of the boil?

    Lol kinda but the point was to stop the water going everywhere and making a mess, whether in my wort or out of it. Gotta fix that leak...
