    DBPD, You took readings after 5 days. 1016 is too high, I suggest leaving ALL brews in the fermenter for 14 days. After that time the yeast will clean up and the wort will start to clear.     Fourstar, I see your reasoning. My local HBS has only Fermentis packet yeasts at $4.60 a pop, so two packs gets a bit exy for me. I've done only one pack pitched at 18 and is now in the fridge on it's way down to 12 -15. I let you know how it goes. cheers BB

    ph, If you pitch at room temp then chill slowly in the fridge, one packet will do. If the wort is at lager temps ( 10dC or so), you will need 2 packs to get it started. cheers BB

    Rob, 1018 sounds a tad high, considering the fermentables you mention. I would definately raise the temp to at least 22 and give it a few more days, and certainly rouse the yeast. This should finish at around 1010 to 1012. I would not bottle it yet. Another week won't hurt. BB

    T, I agree with wg. It is best to try out a can using the method recommended by the manufacturer. Then you can tweak it on the next brew, if needs be. Some kits, especially Morgans, are damn good without any extra malt or hops. cheers BB.
