Racking to secondary reduces the risk of autolysis. As the Monk said, you need a lot of yeast for it to be a problem. By racking to secondary, you take the beer off the yeast cake in primary, hence less yeast.
I usually do a gravity check every couple of days, just to see how things are progressing. The airlock bubbling isn't as good an indicator.
Sounds like everything is coming along fine.
Some guys on here did a big batch, and split it into three fermenters, each with a different yeast. Anyone remember the post? I think Snow had something to do with it. Anyway, with the only difference between the three being the yeast, they produced three very different beers.
Wreck.
I gotta agree with MAH and others. A lot of work places allow you access to the internet for personal use, within reason.
I have worked at places where people have been sacked on the spot for viewing inappropriate material. Thats very different to checking out a beer site in your lunch break...
It was the oatmeal stout that came 3rd in NSW. Wasn't expecting a result at the Australian, so I'm not too concerned. Only entered NSW in the first place for some feedback.
Just have to get a few more beers up next year.
