    Been reading this thread from the start, bloody fantastic. I just realised it was a few years old but great reading. I dabbled quite a bit in partial mashing, doing mini full mashes is just as easy. Will have a crack for sure.

    Any thoughts and ideas into using honey in a kit beer ? I've just put down a coopers lager with 500 grams of liquid wheat and 500 grams of a new zealand organic honey. Yeast is safale US 05. Aim to make a nice spring / early summer honey beer. First attempt ever for me with honey in the wort...

    I've found using a good dry yeast such as safale which operates down to 16 degrees and probably lower is the way to go. You have to buy seperately of course, but it can make a good kit beer better. You just dont get enough yeast with kit beers. Also in cold conditions, if you get your starting...

    Did pretty much the same brew. Coopers stout and dark ale, with 1 kilo dext. Just tasted a couple three weeks in the bottle and very sensational. Still green but my best k@k stout ever. Bitterness is pretty much around the same as commercial coopers stout. As is mouthfeel and taste. Beautiful...

    For peace of mind buy a new pack, only three bucks or so. But i would think they'd be ok to use. I mean, does sugar go off ??

    All done and dusted and bottled. Tasted great from the fermenter, very fresh. Will post in about a month on taste.....if i can wait that long. :D

    Thanks BribieG, good post, very helpful. Got myself 2 kg of Joe White Ale, some Cascade hop pellets, Safale yeast and a tin of Coopers Lager to work with, see how i go.

    Depends on what you want it to taste like. Two weeks it will be carbonated enough, and drinkable. But three months it would have matured and will be much better.

    Thanks for your efforts, that looks good. I might adjust it to take into account a hopped kit can, add hops for flavouring and aroma. You've got my juices flowing again, after a long time..........i'm itching to do this now. Safale yeast i reckon.

    Thanks manticle, that sounds around about what i was after. 2 kg of grain do ya reckon ? My tun is one of those ones Grumpys made a while back, i think 10 litres, with a little stainless strainer in the bottom.
